u had possibly decoded a very good recipe
but...if u didn't...what a shame...i will give u the one now:
RISOTTO SCAMPI E ZUCCHINE = RISOTTO WITH PRAWNS AND COURGETTES
1) Cut half onion in little pieces , do the same with zucchini
2) wash fish thoroughly, take off the shells and the little black grain u can find inside
3) prepare a pot of vegetable stock which u will always keep warm
4)put olive oil in a large deep dish, wait a minute then put onion and two cups of raw rice.
5) stir well untill oil start to fry then put zucchini and wait, stiring, another 2 minutes
6) then put half a glass of white wine (PROSECCO is the best 4 this) and let it evaporate with high fire
7) put vegetable stock, just a bit, reduce fire and cover 4 a while
8) when it starts to boil u start to mix gently putting the stock each time u see the rice near to dehydrate
9) taste the rice oftenly, when it'll be almost ready (5 minutes before) u put washed prawns and parsley
then mix, mix and mix again and the dish is ready,...don't forget salt and pepper if u like...u can put more prosecco during the cooking...it gives a lot of taste..but pay attention to always let it dehydrate.
many people use to put butter at the end of all...i don't like it, it's takes off the real taste of vegetables and fish...but gustibus.....
with this dish i suggest white wine, prosecco is perfect, champagne if u want to celebrate or u planned to fancy somebody...even chardonnay is good or pinot bianco...it's up to u
