So I've uncovered my inner chef.
I'm using my new roommate as an opportunity to try and cook more for myself instead of eating out all the time. So far this week, I've gone 5/5 for homecooked suppers! I've also discovered the wonder that is the spice rack.
On Monday I made these barbecued potato-hashbrown things with a made-up-on-the-spot seasoning thing. They were good, but needed more of the spices in general.
Then, last night, I tried this curried rice-vegetable medley and curried chicken. Again, just more of the spices in general...the chicken probably could have been marinated but it was pretty good. The general recipe is, per chicken breast:
1/3 cup lemon juice
1 teaspoon cumin
1/2 teaspoon curry powder
1/2 teaspoon powdered cayenne pepper
1/2 teaspon paprika
1/2 tablespoon crushed garlic
1 tablespoon fresh cilantro
Combine all of that and baste or marinate the chicken in it. Though, you could probably double all those measurements safely.
Then tonight I made asparagus, perogies, and spicy barbecue chicken.
Way to go me!
Though, tomorrow is games day and I'm sure i'll be ordering a pizza and drinking a bunch of beer. You win some, you lose some.
