I've been doing a lot of vegan cooking lately. Turns out, I'm a much better vegan chef than I was a vegetarian chef (and I use the term chef loosely...). I've been making the best dishes I've ever had! I even made pizza the other night which was way better than regular delivery or frozen pizzas....AND it was "cheesy"! I'm so happy, this is something I've been wanting to do for a long time but always thought was too difficult or advanced for me. I was so wrong. So wrong. I'm not calling myself a vegan yet, because I still need to hone my cooking skills to the point where I can whip delicious dishes quickly and bring them to parties and other places, but for now I am enjoying my time in the kitchen more than I ever have. <3<3<3
Oh, and so this blog isn't totally useless I'm going to post the recipe for the pizza I made the other night.
Vegan pizza
Dough:
1 cup wheat flour
1 tablespoon active dry baking yeast
1/2 tablespoon salt
2 tablespoons olive oil
Preheat oven to 500 degrees.
Warm the oil and water. Mix together ingredients. Knead the dough on a floury surface, adding more flour until it's not sticky. Put it in a ball, cover with oil, and set aside for 25 minutes while you prepare the "cheese."
"Cheese"
1/2 cup cashews
1/2 cup nutritional yeast
1/2 cup cornstarch
1 1/2 cup water
1 tablespoon garlic powder
1 tablespoon cumin
Blend ingredients in a blender until it's completely smooth and liquefied. Place in a saucepan over medium heat, stirring occasionally, until it is thick and hot. Bring it to low heat.
Prepare whatever vegetables you want while the dough is rising. I cut up cabbage and onions but you can put on it whatever you want. When the dough is ready, flatten and work it into whatever shape you want. If it breaks, pinch the dough back together. Spread tomato sauce/pasta sauce on dough. Take "cheese" and spoon it over the sauce, trying to keep it an even layer. Put your vegetables on top (I also put spinach leaves on mine). Place pizza in oven for 12-15 minutes. The "cheese" will be a bit gooey at first but should harden up a bit after it cools a little.
