I do meatless mondays to get my kids to eat more veg... this past monday I made crepes and stuffed them with egg, kale, peppers, and mushrooms. Top off with cheese. (or not?).
Bean burgers, veggie tacos, and deep fried cauliflower have been pretty popular in the home as well
