so lately i have been making myself sick.
before you assume things let me explain.
this summer i was diagnosed with celiac's desease. this means that i have an intolerance to gluten (found in wheat, barley, oats, and rye). note, intollerance, not allergy. basically i am genetically deficient and thus unable to break down said gluten which in turn damages my small intestines rendering it unable to absorb nutrients, vitamins, some carbohydrates etc. symptoms vary anywhere from diarrhea, projectile vomiting, to cramps, fatigue. i have thus far been lucky as far as symptoms are concerned. i would occassionally have cramps at the worst.
lately, i have been eating wheaty things like cake, cookies, brownies, cinnamon buns etc. why? because i bake them while i'm at work (reason: bored, up all night, want to be nice to clients) for other people and then i can't control myself. desserts have always been my weakness. i have a HUGE sweet tooth. all of my teeth are sweet teeth.
but my symptoms have started becoming more severe. i'm not at the worst, but my muscle cramps can be almost unbarable at times.
not to mention that the damage i'm doing to my intestines is causing me to become vitamin and nutrient deficient. on the plus side, i gain no weight. ok. that's not even funny, i know.
but i'm so frustrated! i really love desserts and there's hardly any that i can have now. there's some stuff you can get that's made with rice flour but it's not the same. and it's very expensive.
my sweet teeth are suffering if i eat properly or not.
anyone have any good wheat-free recepies for sharing?
take pity, please. i pigged out on cake at work last night and now i can't even walk straight from the cramps.

I've had some alright gluten free cookies and such from The Big Carrot (out on the Danforth) before as well.
I have little to no sweet-tooth though, so my immediate reaction is simply to stop eating that stuff. But I know that's harder than I would think.
