just came back from (unnamed restaurant) where their zabalione was fcking alchoholic and their cannolis were...uhhh...ok. the service was excellent though. we didnt eat almost any of the zabalione so the waiter took it off our bill. not much of a fan of ricotta in desserts (was in the cannoli filling). if anyone has an excellent recipe for a dessert with ricotta, let me know. ive already tried a honey ricotta cheesecake. i didnt like the texture the ricotta gave it.
in class we're working on hollandaise. oh the dreaded hollandaise. i got a blister from whisking so much. the first time i did it, it didnt break, but it began to turn green because of the reaction between the bowl and the whisk. we'll be doing it again on monday. and our chef said we should practice it everday before class. for the final we have to make a five minute or less one egg hollandaise.
after hollandaise we'll be doing soups. yea!
