- flaky pie crust
- butter for greasing
- one bunch asparagus
- bag of baby spinach
- 1 clove garlic
- about 10 -12 baby tomatoes
- fresh chopped basil
- 1/4 cup parmesan (I used crumbled asiago)
- 3 eggs
- salt n' pepper
Preheat oven to 375 degrees.
Grease oven safe dish and lay out your crust.
Cut your asparagus spears in about 1.5 inch pieces. Put a little water in a pan and heat. Blanch your asparagus for about a minute.
Do the same with the spinach. But maybe do that for about 30 seconds with the spinach.
Mix eggs, fresh basil, chopped garlic, salt and pepper together.
Then make your layers.
Spinach on the bottom. Asparagus and tomatoes next. Then pour the egg mixture evenly over all of it and sprinkle cheese on top.
Put in the oven for about 35 minutes.
DONE.
