You know I don't remember where I posted it, so here it is:
Corn Salsa
2 cans yellow corn (or 2 ears of corn, since you now live land of good corn)
2 tomatoes
1 small red onion (dice)
1 red bell pepper (dice)
1 yellow bell pepper (dice)
1 to 6 serrano peppers (depends on how hot you want this to be, dice)
1 to 2 jalapeno peppers (depends on how hot you want this to be, dice)
1 can diced chilpotle chiles (the can may say roasted jalapenos)
1 anaheim pepper (also known as poblano, dice)
juice of 2 limes
1 tablespoon of olive oil
If you're using fresh corn, coook the corn and remove the corn from the cob, put in a large mixing bowl. If you're using canned corn, put the canned corn into a large mixing bowl.dice the peppers and the onion (genereally, the hotter the pepper is supposed to be, the smaller I will cut it). If I'm making this for people who I know like hot food, I use six serranos and 2 jalapenos, if I'm not sure, I'll use less. Combine all of the veggies in the mixing bowl. Add the lime juice and olive oil. Mix well.
