Tonight I had to do a special tasting menu thing for a couple people staying in our hotel. They're from Belgium, the French part, not the Flemish part, and I ran a 5-course thing for them. Here's the goods:
Heirloom tomato salad with balsamic syrup, fresh basil, sea salt, olive oil, and goat cheese
Lobster ravioli tossed in citrus butter
Quail, stuffed with walnuts, served with fresh figs and pan jus
Pan-seared lamb tenderloin with butter-roasted fingerling potatoes and radish tops, with a red wine/black currant reduction
Cheese selection with various accompaniments
They said it was as good as any French restaurant they've been to in France or Belgium, and was the highlight of their whole trip to the States.
