Post-American Thanksgiving dinner: cod baked in puff pastry with shallots and sliced pear, collard greens in duck demi-glace, eggplant sauted in garlic and red wine, pumpkin cupcakes with ginger frosting (made yesterday, and forgotten here). Bourbon squash pie on the way, and a selection of cocktails to be created. Mostly pear-ginger based.
