2 for 2 on the Autumn inspired recipes I've done lately.
One was a Curried Butternut Squash Soup with Lentils
and the second one was Southern Sweet Potato Pancakes served with pecan pieces and maple syrup. I served that to the boy yesterday in bed. The boys have also been getting some of the leftover sweet potato mash with their dinner. They love it.
A couple of weeks ago I made a white bean (navy and canellini) soup with mustard greens and chicken apple "soysage" that turned out really good too. It's been soup weather for sure. Especially since I've been sick lately.
I've been craving plain ol spaghetti lately- but I don't know if Yonderboy is ready to eat italian quite yet. I have half of a butternut squash still to do something with, that I thought of doing a butternut squash ravioli with sage- but again the Italian thing is an issue. I also have a sweet potato to use. But I think I'm going to do a sweet potato cake with a ginger tofutti cheese frosting. Ohh, maybe I'll do them in muffin pans and have them out for the brunch.

I bought this white bean soup mix the other day, i forgot to check the label, and it had chicken bits in it. i was so disappointed because otherwise it was really good.
Ministrone is good too, though it's hard to find a good one w/o any meat-flavoring.
To bad its to late to eat
