Being that I am a Gemini, it seems I surround myself with lots of Libras. So I have had to bake a few cakes in the last few days. I get lots of compliments on my cake so I thought I'd share my recipe or recipes.
Yellow Cake
1 butter recipe golden cake mix, sifted
3 eggs
1 stick butter
1/3 cup apple sauce
cup water
1 pint organic whipping cream
1 tsp pure vanilla extract
cup sugar
1 can crushed pineapple
1 pint fresh or frozen strawberries OR fresh, frozen or canned blackberries OR canned cherries
Optional
Rum, amaretto, blackberry schnapps, peach schnapps, white chocolate liquor.
Mix cake stuff and bake cake as directed on the mix, make it in two pans.
Let it cool and cut the rounded tops off of the cake.
Whip up whipping cream until stiff but not butter, and add sugar and vanilla flavor halfway through whipping.
Place bottom layer of cake on the serving plate and pour some of the juice from the crushed pineapple onto the cake. About cup evenly poured around.
Spoon crushed pineapple onto the bottom layer until evenly dispersed and about inch thick.
(If using fresh or thawed frozen berries slice or crush them a little and add some sugar to them.)
Now spoon a layer of berries or cherries onto the cake and then add a nice glob of whipped cream.
Add the top layer of cake to the cake and start covering the sides of cake with whipped cream.
When the sides are somewhat smooth and covered, drizzle more pineapple juice over the top layer of the cake and add a few more spoons full of crushed pineapple to the top center spread to about 1 of the edge, then add the other berries and spread them to within 1 of the edge of the cake. Spoon the rest of the whipped cream in a puffy crown around the edge of the cake. Eat it right away or refrigerate right away.
When serving you can pour a shot of your choice of liquor over it for extra goodness.
This cake is also really tasty when made with a dark chocolate cake. I do both to mix it up a little.
