I just saw on some thread that you worked at an Elks Lodge before this latest cruise job.  I have cooked at two Elks clubs in Illinois and was exec at the last one. Service clubs are becoming a rarity these days so it's cool to know someone else that has worked them.

Yeah. Working for a board of trustees is a pain in the ass. The one I ran the kitchen at is failing. I made it two years and built up their  bqt business but before me they had 4chefs in two years and the same happened when I left. They are currently without a chef. Again.

Ironic thing is, Vida was our high school  pitching coach very briefly.  I hooked up with his wife 10 years after the fact...

Geez all I ever got was a baseball handed to me from NY Yankee Ron Guidry. Sitting front row for a Jays Yankees game at old exhibition stadium when I was a kid. Dude wanted my hot dog as a trade but I wasn't handing it over. He gave me the ball anyway. Lol

its a simple menu. during lunch, its burgers, sandwiches, a lot of bar style food. for dinner, its roughly the same. although i run a special every night as well. one night out of the week i will run a buffet for the Lodge members. simple stuff @twannantonio

That's Awesome @surrealhopeful! I'm pretty well versed and knowledgeable in just about everything! But my top expertise is Regional Italian Cuisine first and foremost. Lots of culinary influence. Too many to list at the moment. Currently I run the kitchen at the Eugene Elks Lodge in Oregon. Member events and such, wedding parties. Once a month, I run a popup out of the kitchen here doing my own food. It's a good gig at the moment.

@mickdawg75 that sounds pretty good 😊 it'll be good for you to get your own place and have creative freedom. I definitely miss that. I didn't realize how lucky I really was getting that from my last job. I get creative freedom now at my current job but very limited.  Hopefully next gig will be better
