note: "safe" way to peel ginger, certainly, but i gashed my thumb open after peeling it when i was cutting it into pieces to put in the freezer. also got ginger juice IN MY EYE. fuck.
This will sound like a stupid question but, when you keep your fresh ginger in the freezer, how long can it last? I love fresh ginger, but I always feel stupid buying the huge piece when I only need a little bit for recipes.
