chocolate chip cookies that are cholesterol free and not that unhealthy but not healthy either
these cookies are pretty yummy. i suggest them wholeheartedly. they are chewy! whoa!
preheat yer oven to 350f (180c).
2 cups flour
1 tsp baking soda
1/2 tsp salt
sift together in a medium-sized bowl.
1/3 cup earth balance margarine, room temperature
1/3 cup canola, vegetable or sunflower oil
1 cup turbinado, raw, cane, or other non-refined granulated sugar
1/4 cup brown sugar
(if you want, you can use just oil OR margarine - make sure to use the same total amount - or just one type of sugar. i used both oil and margarine because i didn't have enough margarine and i threw the brown sugar in as an afterthought. you could use more sugar, too, if you want to, like, die.)
cream together in a large bowl.
1/2 cup soy/rice/almond milk
3 egg equivalents - i used 3 tsp psyllium husk, but you could use ground flax seeds, silken tofu, applesauce or banana instead - read more about vegan egg, butter and milk replacements
2 tsp vanilla extract
mix and add to the margarine/sugar mixture.
fold the dry ingredients in to the wet ingredients in batches, mixing to create an evenly distributed batter.
add:
1/2 - 1 cup dark chocolate chips
mix together. turn out batter in tablespoon-sized lumps on an ungreased cookie sheet. flatten the lumps with a fork. bake for ten minutes or until satisfying-looking.
eat warm with a glass of vanilla rice milk, or send your kids to school with one or two in their fancy pants lunch box.

"... not that unhealthy but not healthy either" sounds good enough to me! I'll have to try making these. Have you ever tried it with the banana? I'd imagine that would be delicious.
