Because I know that not all of you want to see only pics about me... From now on I'm going to share some vegan recipes with you every week :D
Here is the first one...
COLOMBIAN CHEESE PIES
INGREDIENTS
1 1/2 cups cooked yellow corn flour (masarepa)
1/2 Tbsp. Goya Sazon with Saffron
1/2 tsp. salt
2 cups water
1 Tbsp. vegetable oil, and somewhat more for frying
1/2 pound of vegan cheese (Daiya brand is)
Pepper, lemon and avocado, for garnish
INSTRUCTIONS
To prepare the dough , place the cornstarch in a large bowl . Add the Sazon Goya and salt and mix well. Add the water and vegetable oil and mix to form a dough . Form a ball and knead until smooth , about 2 minutes. Cover with plastic wrap and let stand for 20 minutes.
Divide the dough into small portions of about 1 1/2 tablespoon each, then shape each portion into a ball to roll them between the palms of your hands.
Place the balls of dough between 2 pieces of plastic wrap or wax paper and stretch each to form a very thin circle. Remove the top of the plastic wrap and place some vegan cheese in the center of each circle of dough . Then, using the plastic wrap down , fold the dough to enclose the filling vegan cheese , forming a semicircle. (Remove the plastic wrap when done . )
Fill a large pot with vegetable oil and heat over medium heat.
Carefully place 3 or 4 pies at the same time into the hot oil and fry until golden brown on all sides, about 2 minutes.
With a slotted spoon , transfer the patties to a plate. Serve with red pepper, lemon and avocado slices on one side.
