So its time for another one of my favorite recipes.....enjoy!!!
Peanut Butter No Bake Cookies
1 1/2 c. uncooked oatmeal
1/4 c. peanut butter
1 c. sugar
1 tbsp. cocoa
1/4 c. butter
1/4 c. milk
Set aside oatmeal and peanut butter. Boil sugar, cocoa, butter, and milk for 2 minutes. Mix boiled ingredients with peanut butter and oatmeal. Quickly spoon onto wax paper before mixture dries. Let cool.
*The secret is to let the mixture boil the full two minutes...cut it short and the cookies wont harden properly and will be soggy!

These are really good! I find it easier to use a candy thermometer. I cook the cocoa, sugar, milk & butter to 240*, 240* is called the softball stage for sugar. 240* & the candy will be perfect every time.
