Keeping up the Sring Time theme...
Making dinner for 8..at last I will be able to put the extra leaf in my table...leaves in tables...leaves on trees...See where I'm going with this????
Halibut is on the menu...Relatives from the middle of the middle states...they want fish...Soooo...no pork...I tried to slip some bacon into the vegetable/mushroom medley but I was caught...
The only halibut I could get was already sliced into steaks...so I have spent the last few minutes converting them to filets...very nice filets though...
I wanted to use artichokes in the mushroom/vegetable medley but I am a little early for that...even this close to artichoke territory...next month...April is the true month of Springs promise...March can be so borderline..like today, blue sky peeking through the fog and mist...
But APRIL...now theres the most Spring like month I know...I am predicting a beautiful April...
In the meantime, the last few chanterelles are still in the stores...let them dry out a bit and peel them a bit more than usual and you're all set...Appropriate for the close of winter...until the Fall, when they come back to us...just in time for mushroom stuffing....Ahhhhh
..But I get ahead of myself...
Back to work...a bit more mise en place to finish up before I open the wine...It's good to know the cook...
