Warming up to Fat Tuesday
Having been cornered like a Texas rabbit, I am making dinner for my usual uninvited guests. But I get to pick what I make and send them to the store to make groceries... Sent them for rabbit...for rabbit stew. They will find it...I made a call...
I know...but these aren't regular bunny-type rabbits, these are mean, snarling, huge and rude rabbits. Probably from Texas... My grandmother from Texas always made rabbit stew for special occasions. She would tell us that the rabbits she used were "Texas Rabbits", not Easter style critters but ravaging, rampaging beasts that traveled in packs and might even carry off small children, dingo-style...
We felt much better knowing that we were not only being well fed, but assisting in ridding the world of such naughty nasties...but as bad as they might have been in the wild, they were delicious in the finished product... , for non-pork creatures that is...but just add a bit of bacon in the braise and you're all set...
Gotta go cut vegetables....more soon...
Okay, I'm back...It will be a late dinner yes, but I have a few shortcuts to make the production go faster...FIRST and foremost, I take care of the people who want to help...I appreciate the offer but they always seem so hurt when I tell them I don't need help.
So I will have them mince garlic..."no, more mincing, no that's not minced enough"...until they become disenchanted. We go through this everytime. But even if they don't become bored, I will have a shitload of minced garlic. I can always use more minced garlic... It is , or will be, Fat Tuesday after all...
