Since I don't have anything awesome to say here are some recipes.
Pizza dough
&diams 1 oz fresh yeast or 2 packages dry active yeast
&diams about 2/3 cup warm water
&diams 3 cups all purpose plain flour + 1/2 cup to sprinkle on work area
&diams salt to taste I use 1/2 teaspoon
Place yeast in a small bowl. If your using fresh yeast just crumble it up with your fingers. Add half of the warm water and stir until the yeast has dissolved. Set the mixture aside for 15 minutes. It should look creamy when it's ready, stir it well. Place flour in a large bowl and sprinkle in the salt. make hole in the center of the flour and pour in the yeast mixture, remaining water and anything else left over. Stir the mixture well until almost all of the flour has been absorbed. Knead the dough ( it takes about 10 minutes, keep it up until it doesn't stick to your hands anymore. pick it up and throw it against the counter, which sound dumb but it develops the gluten so do that a couple times) Shape the dough to your pan by pressing it and stretching it out until it takes the shape you want. Set aside for 10 minutes before adding what ever toppings you choose. This can also be used to calzones. This makes one 12inch pizza.
Strawberry Mousse with Kiwi Sauce
&diams 12 oz fresh strawberries chopped
&diams 1/2 cup granulated sugar
&diams 1 teaspoon vanilla extract
&diams 4 tablespoons fruit liqueur
&diams 1 tablespoon agar-agar
&diams 1 cup heavy/double cream
&diams 2 kiwi peeled and chopped
&diams 1 tablespoon lemon juice
Oil six small straight sided glasses, I like to use sweet almond oil. Process the strawberries (reserve one for garnish), sugar and vanilla until pureed. Warm 3 tablespoons of liqueur in a small sauce pan over low heart. Add the agar-agar and stir until totally dissolved. Add mixture to strawberry puree and mix very well. Beat the cream in a large bowl until stiff. Gently fold cream into the strawberries. pour in to the prepared glasses. Cover and chill for about 3 hours. Process kiwi and remaining sugar and the rest of the liqueur until pureed. Run a knife around the glasses and turn onto serving dishes. Drizzle with kiwi sauce garnish with sliced strawberry and enjoy!! ( makes 6 )
