I've been the little kitchen whore as of late! All I've been making though is food, so out of my comfort zone as you all know! I've been dying to bake as well, maybe I'll bake finally today. But anyways, kitchen whore. I've bern doing a lot of stuff out I my comfort zone, starting with the pizza night I posted AND the night after that I made Chili! I made a vegetarian batch for myself and anyone else who wanted and a meat batch for the boyfriend and his dad!! The recipe I use is called "Dragons Breath Chili" by Guy Fieri so you would think it is super hot, WELL IT IS!! But I change up the recipe a bit, so it's not to intense. I'll share my reworked recipe with all of you now! ( I'll add the meat eaters one at the end as well!
Ingredients for "Leviathans breath Chili" AKA really good vegetarian chili. Serves 10-15 servings.
3 Table Spoons of Olive oil (or any oil really.)
2 table spoons of unsalted butter.
3 Anahiem Chilis, roasted, peeled, chopped.
3 Pesilla chilis, roasted, peeled, chopped.
2 Yellow onions, diced.
2 red bell peppers, diced.
1 head of garlic, miced.
1 pound of FAKE ground beef crumbles.
1 pound of FAKE Italian sausage.
3 Table spoons of Chili Powder.
2 Teaspoons of Cayenne pepper.
2 Teaspoons of Cumin.
2 Teaspoons of Granulated Garlic.
2 Teaspoons of granulated Onion.
2 Teaspoons of Paprika.
2 Teaspoons of Salt.
2 Teaspoons of Black pepper.
2 Cups of Tomato sauce.
1 Cup of Tomato paste.
12 Ounces of Lager Beer. (If you get the big can there will be extra to drink!!)
1 Cup of Veggie Stock/broth.
2 15.5 cans of Kidney beans, WITH JUICE!
2 25.5 cans of Pinto beans, WITH JUICE!
DIRECTIONS! (In all honestly the part that takes longest is prepping, having to cut and chop everything takes FOREVER!)
How to Roast the chilis. In your oven, put one of the oven racks on the second highest level. Then put your oven on "Broiler" and put your chilis on a cookie sheet, then in the oven. It takes about 3-5 minutes for the chilis to start to char, so keep and eye on them! Then flip them to the other side once one side looks finished.
Put oil and Butter in one LARGE stockpot over high heat. Add the chopped Anaheim chilis, Pasilla chilis, red bell peppers and onions, cook until caramelized, about 5-7 minutes. Add garlic and sauté 1 minute longer. Add the FAKE ground beef, mix. Then mix in the FAKE Italian sausage. Now add all of your spices! Chili powder, cayenne, cumin, granulated garlic, granulated onion, paprika, salt and pepper! Cook until fragrant , about 1 minute!
Add the tomato sauce and paste, and stir to caramelized about 2 minutes. Now stir in the beer and stock! Add the kidney and pinto beans, BOTH WITH JUICE! Lower the heat and simmer for about 2 hours!!!
I've eaten it at 1 hour as well, but try to let it simmer 2 hours. Wayyyyy better!
MEAT Chili!
Instead of the fake meats you would use...
1 pound of boneless Chuck, cut to 1/4 inch pieces.
1 pound of Ground beef.
1 pound of Italian sausage.
Instead of the veggie broth, you would use 1 cup of Chicken broth/stock.
You can also use bacon grease instead of olive oil in the beginning.
When you add your meats to the chili, do the Chuck first and let it brown before you add the ground beef. Once the chuck has browned the add ground beef and Italian sausage. Let cook for about 3-5 minutes. Then go on to add the spices.
