*this is my mom's recipe for peanut butter eggs, they rock and I thought I'd put the recipe up*
Peanut Butter Eggs:
*1/4 lb. butter softened
*8 oz cream cheese, softened
*2 lb. confectioner's sugar
*1 1/2 cups peanut butter
* 1 1/2 tsp. vanilla
*1/2 tsp. sat
** 12 oz. milk (or dark) chocolate coating chips
Mix butter with cream cheese until well blended. Mix in sugar, peanut butter, vanilla and salt. Mix well and place in refrigerator to chill at least one hour. Remove and form mixture into egg shaped balls and place balls on wax paper lined tray and place in freezer. Melt chocolate in the microwave or over a double boiler and using a fork or toothpick, dip eggs into chocolate and line back up on trays. Allow chocolate to harden and voila!
*For coconut eggs, substitute cocnut for peanut butter. For butter cream, follow recipe adding neither.*
