Thanks for the suggestions. There's certainly precedent in lucha movies for either a boxer or wrestler sidekick. Santo had as sidekicks both a boxer (Mantequilla) and a wrestler (Blue Demon). I think it would be better, though, to make Jon a wrestler, since, then, Pocho could give him lessons and teach him to be a better wrestler.

Anyway, keep the suggestions coming. Nothing's final yet. I'm still brainstorming.
