1 egg
1/2 cup butter, softened
1 cup sugar
1 (15 ounce) can pumpkin or 450 grs of pumpkin pure
1 teaspoon paprika
1 pinch nutmeg
2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 cup chopped up pistachio
3 tablespoons powder cocoa (optional)
1. Cream eggs and butter until light and fluffy.
2. Add the sugar and pumpkin; mix well.
3. Add dry ingredients, mix well.
4. Stir in chopped pistachio
5. Drop by teaspoonfuls onto ungreased cookie sheet.
6. Bake at 375F for 12 to 14 minutes or until firm.
7. Remove to wire rack to cool.
