Since I slack a lot on my BH like the bad girl that I am.. Well THREE of my favorite recipes are Lime Chicken, Chicken Bacon Enchiladas (my own recipe) and BBQ bacon chicken Quesadillas.
Recipe 1: Lime Chicken
What you need: chicken breaks or tenderloins (i prefer the tenderloins because they cook more thoroughly), breadcrumbs (of your choice), lime juice, cooking oil (of your choice), and mozzarella cheese. && Large skillet or frying pan.
-Oil a skillet just enough to coat the bottom. place stove on medium heat. While waiting;
-Bread the chicken you can use egg if you want, but it's not necessary.
-place chicken in let sit on both sides for 3 minutes. Flip over to original side add lime juice let cook for 2 minutes, flip over add lime juice again sit for 2 minutes, repeat this process, until chicken is thoroughly cooked.
-Add mozzarella cheese, place lid over pan until cheese is melted to preference.
Read to serve.
Recipe 2: Chicken bacon Enchiladas
What you will need: Tortilla (of choice), re-fried beans, bacon(of choice), Shredded or stripped chicken (you can buy pre-cooked or make it yourself, entirely up to you), Enchilada sauce (of choice), and cheese (of choice) as well as baking pan.
-preheat over to 375*
-Cook bacon and chicken (separately until its how you want it [crispy, grilled etc.]) when these are done cooking place off to side.
-next take your tortilla spread beans down center of tortilla.
-place chicken, then place bacon, for each enchilada take a spoon full of sauce and coat the inner meat (hehe).
-then place cheese
-roll up tortilla.
Repeat this process until pan if full
-once pan is full, spread beans across the enchiladas
-pour sauce evenly across
-sprinkle with cheese
-place in oven for about 20 minutes or until cheese is melted
for a little extra flavor, add diced tomato.
3. BBQ Bacon Chicken Quesadillas
What you will need: Tortilla (of choice), BBQ sauce, bacon(of choice), Shredded or stripped chicken (you can buy pre-cooked or make it yourself, entirely up to you), and cheese (of choice), though mozzarella is best as well as cookie sheet.
Preheat oven to 375*
Cook bacon and chicken (separately until its how you want it [crispy, grilled etc.]) when these are done cooking place off to side.
-take your tortilla place chicken, then place bacon,on half.
-then coat with as much BBQ sauce as you want
-then place cheese
-fold in half
-Place on sheet
-place in oven for 20 minutes, or until the tortillas are a golden brown!
-if you're daring dice up mango and place in the quesadilla, or serve as side.
Sour cream as an optional dipping sauce
