WTF I was sooooooooooooooooooo annoyed yesterday. I go to Wegmans, the insanely wonderful grocery store to get the main ingredient for my Ostara Feast and the damnable Lambs are everywhere not leaving any meat case space for my Free Range New Zeland Rabbit. It is days like that that Jehovah kinda pisses me off. I hate practicing a minority religion.
The butcher said to try back on Wed or Friday. They Always have fresh rabbit and I waited till yesterday so I wouldnt be freezing.
Well I guess our Ostara meal will be waiting until Wed or later. My folks are coming on Friday and I seriously doubt my father would go anywhere near a kitchen that was making Rabbit Stew.
Here is the recipe I will be using
Rabbit Stew
8 slices of bacon
cup all purpose flour
1 teaspoon salt
teaspoon of pepper
teaspoon of paprika
3 to 3 pound rabbit cut up
pound mushrooms cut in half
1 16 ounce jar Whole Onions, drained
2 teaspoons chopped fresh or teaspoon dried thyme leaves
1 bay leaf
1 bottle (12 ounces) favorite beer, Irish stout (or other dark beer) or white wine
1 tablespoon of cornstarch
2 tablespoons cold water
Chopped fresh Parsley
Cook bacon in Dutch oven until crisp. Remove bacon reserving fat in Dutch oven. Mix flour, salt, pepper and paprika. Coat rabbit pieces with flour mixture. Heat Bacon fat until hot. Cook Rabbit over med heat about 15 minutes or until brown on all sides. Add mushrooms, onions, thyme and bay leaf. Pour Beer or wine over rabbit and vegetables. Crumble reserved bacon over mixture. Heat to boiling; reduce heat
Cover and simmer about 1 hour or until thickest pieces of rabbit are tender. Remove rabbit and vegetables to warm platter; keep warm. Remove bay leaf. Heat liquid to boiling. Mix cornstarch and water. Stir into Beer mixture. Boil and stir 1 minute. Pour sauce over rabbit and vegetables. Sprinkle with parsley.
Notes:
More liquid can be added to include potatoes and carrots in the stew or canned potatoes and carrots can be added 20 minutes before ready to serve
Only use an alcoholic beverage you actually like the taste of. Water can also be use in place of Beer, Stout or Wine but stew may require more seasoning.
