Thanks everyone for the warm wishes. I'm STEAMIN'!!!
So today was just another day for the culinary voo-doo queen. I had some free time at work and had to get rid of some milk whos expiration date was today. It was either biscuits or muffins so I ask my boss, "What are you in the mood for?" he replied with muffins, "So what kind of muffins do you like?" he replied with almost everything but he added that we had extra cranberry relish leftover from a catering event the night before. So in about 20 minutes I had whipped up a batch of cranberry muffins. After everyone in the kitchen had their fill (after taking one bite of one muffin they snatched two more.....greedy) I put the rest (I made about 6 dozen) in a basket and took it outside to the cashier. I placed it next to the cashier and told him to charge twenty five cents per muffin. Well, by the time I was ready to leave work (3 hours later) the basket was almost empty. He told me that people were snatching them up 8 at a time (2 bucks worth). So what can I say? It's what I do.
Here is the basic recipe of what I used. Now remember.... the culinary voo-doo queen does not measure, that is what makes me so unique.
flour
white sugar
brown sugar
double acting baking powder
salt
milk
egg
vanilla extract
cranberry relish
So what is your favorite muffin?
