I've been a crazy cooking crackhead lately.
I've decided to introduce the world to my enchiladas. So I made a lot of them. And even in such great quantity its hard to let them go because they are like red vines, crazy delicious.
I've made Bean, Ground Turkey, and Shredded Chicken enchiladas. Smothered heavily with queso, jack, chedder, and pepperjack cheeses, topped with spanish rice.
I made one specifically for my friend who likes it "hot". He likes to strut so I wanted to at least make him sweat. The inside of the tortilla is painted with Daves Insanity Sauce, its got some habanero salsa in it, and a whole diced jalapeno. I look forward to his tweets from the bathroom.
I've got another batch about to come out of the oven. So I can have leftovers after I've fed my friends.
