heres another technique...roll out the dough into a long rope...work from left to right using a fork in your right hand cut the gnocchi while with your left thumb push the gnocci away...its might take a lil practice to get the rythm goin but its a fast way to bang em out..
yeah i hated making fuckin gnocci my bad for making it the special and havin the customers go nutz!!..like you ..i thought i had hella orders..then after portioning out i only made 10 orders...i was like what the fuck?
