Just prepared my lunch foods for the first part of my working week
I've started making my own foods to take with me rather than buying something while I'm there, it's cheaper, healthier & a whole lot tastier on the whole
I was gonna go with my usual chicken, but spotted that they had duck breast on offer, so I nabbed some of that Just cooked that, seasoned with plenty of salt & pepper then just pan fried. Had a little taste once it was done & it's perfect!
While that was cooking I made up some mango salsa, just finely chopped mango, the zest & juice of a lime, a tomato & half a red chilli. It's missing fresh coriander but it's still damn good even if I do say so myself.
The first couple of days I'll just shove it all into sandwiches most likely (granary bread of coarse), but I may cook up so noodles instead on one day, maybe couscous. Hmmmmm. I'll see what inspires me I guess

Today's lunch is gonna be pasta with a simple tomato sauce, one of my my favourites WIth lots of garlic bread of course.

After that it's back to the immigration forms, I NEED to finish the damn things & get them to Marvel!!
