I loooooooooove food. So I had to pull on my knickers to write about this homework from @missy @rambo & @charmaine! I'm a huge fan of sweet and savory & could spew recipes for HOURS! But my all time fave is the Mighty Pavlova!
Never having one before immigrating to Australia, I still remember the 1st time I had one. It is like a fucking taste of heaven you guys. Meringue, whipped cream and fruit? Named after a ballerina? Hell yes! Apprently there is a lil confusion on where it originated, Australia or New Zealand? I don't fucking care, this thing is like a dream come true. It's a delightful summer dessert, & well, really, we eat it all year round. I have worked on perfecting the base and have melded a few recipes together, but here is what I do: preheat oven to 150°C/300°F. You'll need:
3 large organic egg whites, 1 cup Caster sugar, 1 1/2 teaspoon cornflour, 1 teaspoon white-wine vinegar, 1 teaspoon vanilla extract. Ok, you'll need an electric mixer for this..put egg whites in mixer bowl and beat on high until nearly stiff peaks form. Slowly start adding caster sugar a bit at a time until it's all mixed in smoothly. Stiff peaks is what you're after. Turn off mixer and fold in corn flour by hand, then fold in the vinegar & vanilla. Get a baking tray & cover with baking paper. Spread out meringue in a fluffy circle, or you can make a few smaller guys like this:
Now, before you put the meringue in the oven turn it down to 120°C/250°F! Put it in for one hour, & whatever you do, Don't open the oven door!! Even when the timer goes off. Leave it in the oven to cool down on it's own! I'm talking about not opening the door for like 2 hours after it's done. Seriously this is important! When that baby is ready, take it out and marvel at the puffy beautifulness of it all and get ready to make the topping. So here's what I do: gather up some of your favorite fruit: mango, kiwi, strawberries, blueberries, passionfruit, banana, etc, & chop up. Set aside. Get yourself about 1 cup of whipping creme, or pure creme. Put in your mixer with a dash of vanilla extract, & maybe a Tablespoon of icing sugar. Whip til soft peaks form. Spread the cream on the meringue, & top with chopped fruit, like this:
