really it was a great party, i think i did a pretty good job of not being a downer, right?
for those who sucked up my bean dip and want more:
oven-safe pyrex dish
cover bottom of dish with cream cheese (about half the package)
pour some salsa on it
spread a half a can of beans (kidney or black beans or small red beans work well, NOT baked beans)
pour on more salsa (about a jar total, depends how big your dish is. maybe less than a jar.)
grate cheese on top til you can't really see through it.
cover the top with foil and put in the oven at about 350 until it's bubbling at the sides. take it out of the oven, stir it up with a spoon and let it cool and congeal for ten minutes. Really! it's better if you wait. Then use a good sturdy chip like Snyder's Yellow Corn. leave the spoon in and provide napkins, it's messy.
*I like to mix Sharp Cheddar with a milder cheese like colby jack, or pepper jack. Last night was all cheddar.
*It's good to chop in some fresh tomatoes or peppers.
*I often mash up an avocado, or half an avocado and mix in with the salsa.
*refried beans work, too... a layer on top of the cream cheese.
