I woke up this morning at 6:30 am....WTF? So i decided to be productive and get a bunch of shit done. I walked the dog, did laundry, put boxes in the basement (until i discovered the roomies asswipe kitten in the basement and i had to quit...no wonder my face swelled up and i was miserable yesterday)...and i did my grocery shopping. All before 9:00 this morning!
I just finished putting together a Shepherd's Pie that's going to be yummy!!! I'm using veggie "ground meat" and mushroom gravy, layered with lots of different veggies and cheese, and i made cheesy-garlic mashed potatoes to top it off. Mmmmm....
I talked to a good friend of mine who owns this massive house on the top of a nearby mountain, and he is going to let me stay up there in one of the apartments on the weekends. I am soooo psyched!! It is amazingly beautiful up there! Nobody for miles and miles. He built his house himself, over about 17 years, and it's a very rustic, gorgeous four story house with two apartments. There are porches and decks on every level with porch swings. Ahhh... Paradise. It is a heavily wooded area, except for in front of the house, so you can see mountains for miles up there! Wonderful view. I wish I could rent from him and live up there, but the drive is too much. My jeep would die in about two weeks trying to make that trip every day. So i will take it as a weekend retreat and sanctuary, no problem!

I have been a vegetarian for a year and half and haven't bought any veggie meat substitutes yet, do you recomend any?
