Today was soup cooking and we had to do 3 of them in 3 hours. I know what your thinking that seems like alot of time but trust me its not when 2 of the soup take 2+ hours to make and we had to make Garnishes with eveyone too. My first soup was a,
Roasted Parsnip and Green Apple cream with apple dumplings ans rosemarry Creame.
My second was "Lobster Bisques with fennel chips and a Coral elmulltion.
now cam the Consomme I had a Chicken Consumme and the garnish was Chicken confit and a bundle of juilenne veg but I didnt season it enought so it wasnt as good as it could of been.
The chef as he tasted my soups looked at me and with this disapointed look on his face said Absoulutly wonderful CHEF!!!!
as I said above thats 2 days now he likes my food and my ideas and I really think I could leave with my red seal and run a kitchen.
