One large sweet potato (approx 400g when cooked)
300g wholemeal flour
2 tsp baking powder
2 tsp herbs
65ml water
2 tbsp olive oil
Chop sweet potato and boil til very soft then drain. Once it's cooled a bit, put in a mixing bowl with the flour, baking powder and herbs. Stir in the water and olive oil and keep mixing til you get a dough. Start kneading it like regular bread dough, then roll out into a pizza base and place on a lightly greased baking tray and brush the top with olive oil as well.
Put whatever topping on you want. I cooked a tin of tomatoes with a chopped onion garlic and herbs at the same time as boiling the potato, then topped with mushrooms, broccoli and olives.
Stick in the oven for 25 mins at 200C, et voila!

It makes enough for two or three people. I've got leftovers for lunch today!
