I am the devil.

These are chocolate, cheesecake filled cupcakes topped with homeade buttercream.
And I made them.
First, get yourself a few good vinyl piping bags and a Bismark tip 230 for fillings. You'll also need a Star tip 22, and dont forget a coupler. I mean, unless you wanna make a big mess. Bake up a generic box of chocolate cake mix into cupcake pans with paper liner of choice. (I used a decorated paper liner which was an idiot choice for a chocolate cupcake. I should have stuck with the white ones.) A nifty idea also would be to use 4oz pill cups which you can buy at any Smart n Final type store, which would be WAY cheaper than buying paper liners, but I digress. Back to the cuppys... I like to add in another 2 tbsp or so of cake flour like Swan's Down to add density. Then, get yourself a big ol tub of that new Philadelphia pre-made cheesecake. It's perfect for piping through the bismark tip! Man! Fold over your bag about halfway and put 2 good scoops of the filling into the bag with the tip already inserted. Insert the tip about 1/2 way into the cake and give a good squeeze while pulling the tip up and out. You know the cupcake is full when it puffs up a bit. (Congratulations you just augmented your first cupcake.) Get a clean bag and throw in your star tip with the coupler just like the bismark, and add any frosting you like, or you can reference back to the homeade chocolate buttercream frosting recipe I blogged a few posts back. For regular buttercream omit the chocolate. duh. Pipe in a circular motion and sprinkle with colored sugar, which can be done by mixing a few tsps sugar with a drop or two of food color.
