DJ Food and all the Ninja Tunes (toons?) guys...Mr. Scruff (from the Avalanches) and the like.
kind of nerdy, but Yoko Kanno is a brilliant composer...her work on the anime series Cowboy Bebop is esspecially good.
Lots of people who don't like country like Johnny Cash...

but i'm also starting to listen to Hank Williams Jr....I suggest Cocaine Blues and Family Tradition for songs.

Quasimoto is good, nice chill jazzy digible planets vibe, but more beat oriented.
Eyedea's The Many Faces of Oliver Hart is tight, I stood in a record store in Portland and listened to almost the whole thing as it played over the store speakers...wanted to buy it but was too broke.
Quannum MC's are good, esspecially since you like DJ Shadow, 'cause he does their beats.
Latyrx, also in Quannum, are amazing.
Get the song storm warning off the Quannum Spectrum album, best Shadow Latyrx combo...so good...with the phone sounds...you'll know.

I've heard (and love) about half the other music you mentioned here, and will happily track the rest down and give it a listen.
