Interesting day. Slow, but interesting.
I finally got to try out a new hire, which worked out fairly well. It is hard to get people who can hack it at a high volume restaurant. A culinary school student came in today to work and seemed to do alright. If she can stick with it, she will be the first female I have worked with in a professional kitchen, which is pretty cool.
She's kinda cute too-- so best behavior for me. We need people and I would never be the one to screw it up. I only hope I wont have to watch her back too much surrounded by the types of people you find in this environment. I think she can hold it down though, so I can at least try to sway her towards not taking any shit from anyone.
Regardless, I might still daydream a bit about girl-cook scenarious. I'm only human. Maybe I'll share later.
I'm excited about the prospect of compitent people to work with. It would be a weight off my shoulders to not have to run around like a crazy person 12 plus hours a day. A little time to relax, maybe more opportunities to go out. I'll never get a weekend, but I can rock it out on a Tuesday.
Plus, I can have time to make specials! Beautiful plates with nice ingredients-- that's a fantasy in itself.
