So, I've been cooking for my Burning Man campers, and this Vegan Tika Masala is what I've been making this week, I've made it 4 times now. I can do it by heart at this point! It's so good, I'm about finished with my last batch of it. A few minutes left on the timer, then I add smoked paprika and let it cool so I can put it in vacuum freezer bags.
The tofu goes into a separate bag and is added when we prepare it while we are there. There is also chicken for those who want meat instead of the vegan option. With the tofu it's vegan and free of hot spices, onions, and garlic. I'll have spices to turn up the heat for those who want it. It's good as it is though, I really like it.
