Im going back to school. I had to drop out about six years ago because of serious back problems. I couldnt stand for more than a few minutes and when youre taking cooking classes and having to stand in front of a stove for three hours at a time, thats a problem. Im starting in the fall, which will give me time to get my finances straitened out and to relearn everything I knew six years ago. Ive started a list of everything I need to relearn, and its getting long; stocks, mother sauces, primal cuts, soup classifications, quality grades, you name it. Im going to take a chance and bring my old textbook with me to work. Yes, its Black Friday but since I work in the copy shop and since all of the nuts mostly come in at 6 am, it shouldnt be that bad. If nothing else I can go over things at lunch. Right now Im just going to pick a few things and write down the information so I can make flashcards. Ive got plenty of time, school wont start for me for another six months. That will give me time to get a couple of new chefs jackets (only have the one right now), a new hat (I have the traditional floppy bakers hat and I hate it. Im getting a couple of skull caps) and some new pants that are dedicated to the whole chef uniform thing. I also have a lot of work to do getting my knife skills up to speed. I was never that good to begin with but since I havent used them in so long theyve gotten to be almost non-existent. After the spring semester starts next year I plan on heading up to see if I can find my old chef and talk a few things over with him.
