Well, finally Brett got home. At some point in the evening I was working on my midwife's newsletter (which normally doesn't take this long) and I turned around (around 5:30pm) and everyone was sleeping. Marsh was asleep on the floor, Hailey (my niece) was asleep on the chair and Brett was alseep on the couch. So I picked up Marshall and went in the bed. Soon after, Brett joined us. I woke up again at like 9pm and didn't get back to bed until 2:30.
The vegetarianism thing is going well. I physically feel better than I can remember. I'm not trying to convince anyone that its the way to go, but I'll tell you, its certainly working for me. Anyway.. I made some nachos last night and they were VERY good. Chips, fake meat with taco seasoning on it, vegetarian refried beans, salsa, avocado and this fake sour cream I found in my "The Ultimate Uncheese Book." Tofu, lemon juice, canola oil, salt, corriander and white wine vinegar. It is definately something you have WITH something else. By itself it isn't exactly sour creamy.. but it really completed the nacho flavor. I'm finding out I'm not big into nutritional yeast. Anyway.... Its going good and I have no reason to stop now. Only one thing... I have meat in my freezer, and my family would love to eat it. No sense in it going to waste. I mean, I won't eat it.. but I might as well make it for them seeing how they're going to eat it. Why waste a life for absolutely nothing. I just get a weak stomach trying to prepare it. *shudder*
