2 quarts chicken stock
18 oz tomato paste
8 oz sour cream
monterey jack cheese
cilantro
3 garlic gloves minced
1 onion
first sautee the onion and garlic until soft. while these are sauteeing, mix the stock and tomato paste in a large pot. add the garlic and onion and bring to a boil. the recipe doesn't call for meat, but i usually throw in some chicken for more texture. simmer for one hour. towrads the end, throw in some cilantro for flavor and then the sour cream and about a cup of shredded cheese. make sure it's all mixed in nice and good. save some fresh cilantro and shredded cheese for garnish.
oh and slice up some corn tortilla strips and deep fry until crispy, serve on top of the soup. very easy and very good recipe. i made it for the first ime last night. i always add stuff according to my taste, so sample as you cook and add away!!!
