So I go to the gym tonight to test my injured back. Basketball time, up and down, get back on D, scoring buckets, take a few hard shots to the spine, and I've made it home alive.
I'd say my back was about 80% physically when I went tonight, about 78.2% now. The road to recovery is a long and treacherous one sometimes. It wouldn't be my stubborn self to just ease on down, ease on down the road.
Just finished a tasty chicken soup, and picking at this Puerto Rican baked rice pudding dish I made a few nights ago. You see the baked rice pudding is great after a day or two in the fridge. Then it cools and binds into a consistantcy that rice pudding usually doesn't have. Now it's as firm and juicy as a brownie, but tastier.
I love baked rice pudding, it's probably my favorite treat, just ahead of soft serve ice cream, cadbury caramel eggs, carrot cake, pumpkin pie, pina coladas and ginger cookies. (that's a lot huh?)

You can have all the grocery and department stores... but stay away from the drug stores!
and in randomness, if you like pumpkin pie, you should throw this together and see if you like. its low-cal, low-fat, and so good for you, yet yummy:
1 can organic pumpkin (if its runny, drain off any excess water)
2 organic eggs
2 tbsp organic butter (optional, but adds flavor)
2tsp cinnamon (freshly grated if possible)
2 tsp cayenne pepper (if you like spicy - i do)
1tbsp stevia
preheat to 425. whip eggs & stevia, add softened butter and mix till frothy, but not stiff. fold into pumpkin, add spices, mix thoroughly. bake until souffleeish consistency- usually 30 min to 45 min. yummmm. (all things are approx so experiment, esp if you are at a diff altitude)
