If you brake it down, there are several components to consider as to what makes this show so intriguing... in no particular order:

I just asked my self Why?
I'm 2 episodes in, into the 3rd season and let me tell you about my experience this far. For the first time I realized how vivid the cinematic expression of that show is. If you ever watched "chopped" a culinary competition show or any cooking show. We eat with our eyes. Also going through the preparation process, we can almost smell and taste by simply going of the sound of preparation ( searing the meat, rendering the vegetables in a pan) combined with its visual component and often description of the judges, cooks.
Cannibalism, there have been documented instances at different times and geographical locations throughout our history. Yet here we are, at the age of high definition and sufisticated sound quality a TV show made my senses convince me of what human flesh must taste like. True, I might have skewed perception because of the kind of work I do (I'm a paramedic, often exposed to the smell of large amounts of blood, often seeing torn flesh, smell of body in different stages of metabolic changes or decomposition). So if I'm screwed up enough to imagine that; just imagine how twisted the screen writers/producers must be in order to know how to evoke all those synapses in our body to convince us/me what the snails must taste like after feeding on human flesh with a specially prepared glaze. True, I watched it after being sleep depraved and being a bit hungry ; -) but I would suspect that i would have similar effects/experience if my basic human needs have been met.
The show certainly made me consider all those aspects and I might end up going back and re-watch from the beginning but isolating the sound from the visual aspects and reevaluate my experience.
I have always been fascinated by photography and there have been several movies and shows that have left me at a complete awe with its
