So the last two days have been extraordinarly draining. I've had two of the busiest nights in the kitchen that i've had in months. I've gotten much better at handling the stress that comes with being overwhelmed by more orders than can be handled at once. I've found that now i can stay more focussed and not freak out when people need things when i'm working 3 to 5 tickets back. Hopefully this will help me further on in my career, cooking can be a really stressful occupation, so maintaining composure is absotulely essential.
In reflection, it's pretty much been a shitty week. I cut all my hair down to 1/4 inch yesterday. It's basiclly a chef cut b/c it's the length that you can not wear a hat (while working) without creating a health code violation.
I've much much karma to catch up on in the form of relaxation, hope all is well with you all.
