. Use you "Mexican Appetizer Cheescake" powers for good and not evil
MEXICAN APPETIZER CHEESCAKE (vegitarian-ized version)
(Note: it's only called cheescake. Actually it is a nice little "torilla chip dippy type thingy")
* 3 Cream Cheese blocks (8oz each) softened
* 1.5 tsp Chili Powder
* 2 tsp Veg Stock
(I used on veg boullion cube all dissolved)
* 0.5 tsp hot pepper sauce
- 2 eggs
- 0.5 cup hot water
= 4 oz can of chopped chilis
(I use a random quantity of chopped fresh peppers: yellow, orange or your favourite mild to spicy variety {paplona[?] or anahiem or something last night})
XXX - OMITTED - 1 cup cooked chicken
(My mom used those pre-spiced cajun chicken breasts)
# sliced green onions
# shredded cheese
# salsa
(Note: use less than a whole 24oz jar. last night's was too liquidy)
% tortilla chips
(Note: Make sure they are good, thick, strong! ones or else they will crumble and people will get frustrated and use their hands
. I like the thick, round organic ones. Which reminds me, the recipe requires that all the ingredients are organic. Well, maybe not requires, but it makes it better
)
+ 9 inch spring form pan
(I never bother to take the outside of the pan off, so as freckle pointed out any old 9 inch or so pan or possibly casserole dish would likely do. I just like owning a spring form pan for only this one recipe. It makes me feel cool.

Alright, that's yer shopping list, here is how it goes:
_ Preheat the oven to 325F (unecessary to preheat it for the hour that I did if you also as slow at chopping stuff as I).
_ Beat the first four ingredients [the * ones] in a large bowl (I always use one too small which makes the stirring more cautious than vigourous and makes it take longer).
_ Add egs and water [-] and mix well (It is fun chasing the yolks around with a spoon until they break and get mixed in).
_ Stir in the rest of the measured ingredients [which only leaves = since XXX was omitted to provide a vegetarian option].
_ Pour into a pan [+] and bake for 30 minutes or until set (I can never really tell when it is ready. I baked for 35-40 and it still seemed too wiggly
).
_ (while it is cooking you can help your friend Emeris take her visiting cats down to her car and back home and say bye bye to the

s and wave. Then when she is gone you can ignore her advice not to take a few fingers-full from the bowl because of the raw eggs. It is yummy and it won't kill me...probably)
_ Cool for 15 minutes (I let it cool for longer while I waited for Vikprez to arrive and taughted a hungry {as always} Adore with its freshly cooked smell)
_ Top with salsa, cheese and green onions [#] (I did this after I arrived late at the drunken potluck party just before serving it).
_ Dip with tortillas [%] (The Tostitos{TM} were open, but a big disappointment, so we opened a bag of stout round ones that worked much better)
Now you can proceed to imbibe, boggie, banter and debauch with your pals while they graciously compliment you, mostly because they would never have believed you could cook at all (well at least that's how it was with me)
Well, I am done with my recipe. If you can read through the whole long nonesense and get past the (parenthetical personal tangents) that I used to help obscure the family secrets then you can enjoy the recipe.
