My housemate and I have been using Hello Fresh, and one recipe really was that delicious that we have been using the recipe to make it again. So, I thought it fitting to do the blog homework about my (current) favourite recipe!
Vietnamese-style Pork tacos – with lemon aioli
What you’ll need:
-Garlic
- Brown onion
- Mint (optional)
- Cos lettuce
- Cucumber
- Carrot
- Long red chilli (optional)
- Lemon
- Olive oil
- Soy sauce
- Garlic aioli
- Pork mince
- Kecap manis
- Mini tortillas
I added garam masala, chilli powder and salt and pepper - I can never leave a recipe alone. I always have to tweak it a little
*You can also use lettuce instead of tortillas. Get a big leaf of lettuce and add ingredients into the cup, this is a healthier option.
Prep
- Finely chop, crush or grate the garlic. Finely chop the brown onion.
- Pick and roughly chop the mint leaves
- Shred the lettuce and place in small serving bowl.
- Thinly slice the cucumber into batons
- Thinly slice chilli (I added some to the mince, and used extra fresh chilli on top of the tacos)
- Grate the carrot (unpeeled because its healthier).
- Zest the lemon, then juice (2tsp)
Making the lemon aioli
In a small bowl, combine the garlic aioli and lemon juice to taste. Season with salt and pepper and stir to combine.
Cooking
-Heat a large fry pan over medium heat, with a drizzle of oil. Add the garlic, onion, carrot, garam masala, chilli and chilli powder (to taste), and a pinch of salt, stirring until softened (2-3 minutes).
-Increase the heat and add the pork mince, breaking up the mince until just browned. Turn off the heat and add kecap manis, soy sauce, and lemon zest. Stir until combined.
-Heat the tortillas until warmed through, in a sandwich press or microwave.
Serve up!
Bring everything to the dinner table, family style! Grab your tortilla, add the mince mixture, lettuce, cucumber and garlic aioli. Top with mint and chilli. I plan on making this for my fellow SGAU babes once we an finally get together again! Maybe even find a way to make it vegan for my plant based pals. Who would you cook this for?
