Chocolate bundt cake
For all of this, you'll need a mixing bowl, a bundt pan, electric hand mixer, and a small sauce pan. A sifter for the flour wouldn't hurt either. Treat your bundt pan so the cake won't stick to it.
2/3 cup of cocoa powder
2 1/4 cups of flour
2 cups of sugar
1 1/2 teaspoons of baking powder
1 1/2 teaspoons of baking soda
3/4 teaspoon of salt
1 1/2 teaspoon of instant coffee
1 1/2 cups of orange juice
3 eggs
1 1/4 cups of oil
In a mixing bowl, blend the dry ingredients together.
Add the orange juice and eggs to the bowl and begin mixing. While mixing, slowly add the oil. Once the batter is well mixed, pour it into the bundt pan.
Bake at 350F for 55 to 60 minutes. Remove it from the oven when you can poke it with a toothpick and the toothpick comes out clean.
Once the cake has cooled enough, remove it from the pan. Now, the bottom of the cake (the top when it was cooking) will be bumpy and uneven. Cut it so that it will sit flat on a plate. Keep the trimmings, because they make a good snack before you get to officially eat the cake.
At this point, the cake looks sad and bare, so we'll be adding a chocolate glaze.
Chocolate glaze
1/4 cup of margarine
2 tablespoons of water
1/4 cup of cocoa powder
1 1/4 cups of icing sugar
Melt the margarine and water in a small sauce pan over low heat, stirring frequently. Stir in the cocoa powder slowly enough that it doesn't clump. Do the same for the icing sugar. If you find the glaze to be too runny, add a little more icing sugar. If you find it too thick, add a little more water. You might want to take a bit of the trimmed cake and test out the glaze. Your attention to quality is to be commended! Take one for the team and make sure it is all good. Once you are happy with the consistency, drizzle it over the cake and let it sit to harden.
