I was at work yesterday and decided to make some high end empanadas. But not all empanadas have to be high end, so here is a recipe on how to make the dough and you can make your own. Fill them with something sweet or something savory, it doesn't matter; they are delicious crispy bites of awesome!
3 C flour + 4 T
2 t salt
1/2 C cold water
1 egg
1 egg white
5 T butter
Combine flour and butter, incorporating until fully worked through. Add 1 tsp salt and mix. Beat together eggs, water, and salt. Add to the flour mixture. Knead until dough is fully mixed and gives a slight bounce back. Let rest for 30 minutes and roll out. This dough can bake or fry, but frying comes out WAY crispier. 350 F for the oil.
