I feel like something has been missing recently and I couldn't quite place my finger on it until now. New job, new car, new everything, and yet, something seemed off. I haven't been expressing myself on here recently and I truly think that the lack of keeping up with this blog... random thoughts, recipes, and pictures... helps center me in some way that I can't do over a beer with someone I can trust and confide in. There is some freeing aspect of just telling the world how your day has been or sharing a silly story about how you caught one of your line cooks spanking a fish because it reminds him of a woman's ass. On that note I am rededicating my efforts to sharing what is going on and going to start today.
SO... here are some pictures of whats been going on, some of the food I am coming up with at the new restaurant, and other stuff. Plus a recipe... a classic but a good one! Homemade tortillas, great for everything.
2 3/4 c flour
5 T lard or butter
1 T salt
3/4 c hot water
Combine the first three together until well broken apart, creating small beads. Add water and knead until smooth and slightly elastic. Let rest for 15 minutes, then cut into 12 equal parts. Roll or press out, cook on medium heat in a cast iron pan with no oil. 30 seconds on each side, or til puffing up. That's it! Four ingredients, never fails, perfect for everything.

House cured pork lomo + lemon poppy goat cheese + fig and chantrelle tapenade + balsamic
Swordfish tartare + smoked tapioca + avocado ginger puree + cucumber + mint + thai basil + sweet soy
It feels good to be back. The weight of the world does not seem as heavy anymore.
